Fresh Sourdough Loaves

Our Signature Sourdough loaves boast a crisp outer shell and soft crumb inside. We use locally grown Montana grains, Kamut, Einkorn, and Hard Red Winter Wheat creating a flavorful, nutty blend. Ancient grains offer vitamins, minerals, and easier digestion. A bread that you will love the taste and the healthy benefits.

Thursday:
Sourdough Bagels and Schmears

Our Signature Sourdough Bagels offer the same Kamut, Einkorn, and Hard Red Winter Wheat Montana grown grains as our sourdough bread. A slight sweet, buttery, and nutty undertone flavors that make these bagels unforgettable paired with our Honey-Walnut Schmear.

Fridays:
Fresh Baked Butterhorns

Anaconda's favorite Nostalgic treat. While we keep true to the original flavor and profile of Winds Bakery, we have added our own spin that enhances the butter flavor and flaky texture with enhanced benefits from Kamut and Einkorn flours. Original, Nutty, and specialty flavors available Every Friday!

Quick breads & Muffins

Saturdays are meant for sharing with those you love and hold dear. We curated a menu to create moments and memories through flavors that spark joy and love. Our Wildly Gathered Ingredients

Kamut

Kamut, also known as, Khorasan wheat offers more protein, higher fiber, and higher levels of minerals than modern wheat. Additionally, it is easier to digest, offers anti-inflammatory properties, and lower glycemic index. Studies show that a Kamut-rich diet can lower total cholesterol and blood sugar, while reducing inflammation. Mineral rich in its make up, it is a great source of selenium (a powerful antioxidant), zinc, magnesium, and phosphorus.

It is well known for its light, buttery, and nutty flavor with a beautiful golden hue. While kamut does contain gluten, it is often tolerated better by those with mild sensitivities.

Einkorn

Often called "natures original wheat" it retains a simple genetic structure, which fundamentally changes how it interacts with the body and filled with several essential nutrients.

High in Protein, Antioxidant Rich that support eye health and reduce inflammation. Higher concentrations of zinc, iron, magnesium, potassium and vitamin B6. Einkorn is easier on digestion due to the weaker gluten structure and more water-soluble. It also offers a lower glycemic index because of it's lower starch content. Einkorn has 50% less phytic acid than modern wheat allowing nutrients to be more bioavailable than modern flours. Einkorn also acts as a prebiotic, feeding the beneficial gut bacteria supporting gut health.

The Mother Culture

Our Mother Culture is crafted from Montana's Organic flour variants that captures the specific 'wild' notes of the Big Sky's Golden Triangle region. Unlike standard sourdough starters, this heirloom ferment is built on the high-mineral content of ancient grains. The Kamut lends a natural buttery sweetness and golden hue, while the whole wheat provides the robust enzymes needed for a vigorous, healthful rise. Because it is fed with Montana-grown grains, this starter is rich in: bioavailable minerals, digestibility (a long fermentation process breaks down gluten and phytic acid, making the final loaf gentler on the gut), and complex terroir.

Natural Sweeteners

In our bakery, sugar is never just a sweetener- it is a functional component chosen for its medicinal depth and its ability to unlock the hidden profiles of our ancient Montana grains. We use natural sweeteners in our baked goods whenever possible.

Raw Montana Honey is a living enzyme-rich tonic. It serves as a natural prebiotic that supports gut health and contains antioxidants. Maple syrup provides essential minerals and has a lower glycemic index than refined sugar offering a more stable energy release without the sharp insulin spike. Molasses often called 'the apothecary gold', molasses is exceptionally nutrient-dense.

We source all of our grains locally from Montana's Golden Triangle - Montana Flour & Grains, Granite Mill, and Montana wheat.
